I highly recommend getting up early and heading to the old town before the hoards of tourists arrive. We were able to enjoy near empty streets and watch the town slowly come alive. Vendors on motorcycles delivered fresh eggs and produce while shopkeepers began putting out goods.
We visited several of the UNESCO heritage buildings including the Japanese bridge, Fujian Assembly, and Tan Ky house which is still used as a family home. We enjoyed Hoi An's multicultural foods (rose dumplings, chicken rice, mi Quang, and cao lao). And we shopped. We found a store with high quality products and emptied our wallets on silk, cashmere and buffalo leather.
